Hi, I plan a Food Truck for at the base bone, chicken, vegetable and seaweed or mushroom sipping broths. Not so much as a Paleo or Vegan or (insert your food ideology here), but as a cornerstone of a healthy cornerstone of convenient streetfood as well as offering other options like soups and meals for which the broths come as a base.
Not much, as it turns our is so regional and seasonal and rooted in local and also personal/family traditions as soups and broth.
There will be quality Coffee and Tea and beverages and every part of the puzzle will supply its own story.
So its not so much a functional food or hip thing of the moment, but rather I'd emphasize aspects of the customer personas like
nurturing, caring and loving
foodie, health conscious and looking for certainty in quality of her/his food. To be sure that the family or children get what they need.
Of course there is the part of the spectrum with the Paleo/Crossfit or Quantified self Hipster or Biohacking Personas.
They will find what they crave as well.
Take home or order options provide both novelty, a bit of culinary adventure and empowerment at home as well as convenience.
So it is really a concept that aims both at more tender and caring as well as more special interest crowds.
But I aim to be nondogmatic and see it as an itegrating approach.
Going to the basics - the broth, the base of all cilinary arts and as a standalone, a unquestioningly healthy snack that I'd like to take a bite out of Starbucks share of afternoon pick me ups.
